 I bought the Allclad brand for the longer lasting nonstick coating and the easy to clean hard anodized surface.

 I normally use only a small amount of olive oil but have to use a much larger amount. This adds to the calories and the money I spend on the olive oil. 2) The handles are very uncomfortable especially given the weight of the pan. They should be rounded like Chantal's pans, which are very easy on the hands

Good Quality Poor Design

 Customer Support was of little help and suggested I send the pan in to be tested (2-3 week turnaround time). When I asked to speak to an engineer or technical person, I was told none were available. At this time, I recommend avoiding this cookware.

After allowing the 10" pan to reach equilibrium at a mid-level setting on my new induction cooktop the surface temperatures inside the pan on the frying surface varied widely from 260F to 370 F. I used an extremely accurate laser thermometer to make the measurements. Customer Support was of little help and suggested I send the pan in to be tested (2-3 week turnaround time). When I asked to speak to an engineer or technical person, I was told none were available

Poor heat transfer across the base of the pan

 Eggs fry well but still need a touch of oil. Meat sears very well but not as well as stainless (that is expected). Not bad but disappointed about the pre scratched state they arrived. Never have issue with Viking pans arriving that way

Mine arrived with light surface marring. Not scratched down to the base metal but not awe inspiring. They heat evenly and hold heat well. After initial wash I did the cheese test and while the cheese did leave material behind it was easy to wipe away

 That doesn't seem to be the case anymore. Maybe I just got used to it, or maybe the pans actually have to be broken-in! The non-stick coating works very well---at least for now. One manufacturer explained that eventually ALL non-stick pans loose their coating and stop being "non-stick." How long your pan "works" is pretty much a function of its quality

 Some people consider anodized aluminum to be a non-stick surface all by itself.  One thing that disappointed me with the All-Clad skillets is that I quickly got scratches on the non-stick surface, even though I carefully avoided using metal spatulas. They SAY you can use PLASTIC utensils. But DON'T

  Their quality is excellent. I recently bought a Swiss Diamond stew pot made of the same materials, and its walls were only half as thick as the walls of the All-Clad pans.  Of course, it's hard to achieve perfection. At first, I found that the All-Clad skillets took a long time to heat up

 They SAY you can use PLASTIC utensils. But DON'T. Just use soft wood.  The only other drawback is that many women would have a hard time with the weight of the 12" skillet

 Most things I cook med-high, generally not full on. The anodized surface is super easy to clean with hot soapy water. Good quality for the price.  Cons: Hard anodized surface is just a tad soft, not as soft as Teflon(or as dangerous) but is still susceptible to scratches

 Do I only use wood or silicone utensils? Yes. I found the 12” anodized All-Clad on sale locally and fell in love. I ordered this set to replace my smaller non-stick pans and I do not regret it at all. I used to buy a cheap new (8”) from the local restaurant supply about every year or two just for eggs, these pans are way better and cheaper in the long run

  Pros: Nice heat distribution and super slick surface. Besides being great for cooking fish and eggs, I’m able to “fry” breaded chicken tenders to perfectly golden brown in just a few tablespoons of oil. Most things I cook med-high, generally not full on. The anodized surface is super easy to clean with hot soapy water

No Drama & Fluff In This Review

 It really hurts my hand holding and lifting it. As mater of fact, all the products from All-Clad with the long handles have the same tribble design. I am a young woman and exercise and lift weight every day. But these pots and pans are so heavy, I can't imagine an older person being able to hold in one hand and lift using these tribble designed handles

Bad desing of handle. Extremely hard to hold.

5 years, the most frequently used pan is finally showing signs of deterioration. The discoloration lines up with the flame pattern from our highest output burner but it still works and food still doesn't stick; but its days are definitely numbered.  By far, this pan has outlived any other non-stick pan we've had in the past 5-10 years. Where most lose their non-stick properties after about a year, this one is still useable
