 so we've got this metal handle. It's riveted onto the wok itself, pretty thick so we get good heat control, good heat dissipation on there and then the multi-level non-stick So this is actually safe to use with metal utensils so we can scrape, scratch the surface, Scrape this not going to be a problem. Um, you know, and on a more traditional non-stick this would not be a good idea. but uh, this special non-stick from California is safe for use with metal utensils and some other things that are nice about it

Although as I'll show, the surface is actually really easy to clean because it is such a good non-stick and it is also oven safe up to 500 degrees so you can go straight from the cooking surface here into the oven no problem

 um, without having to add any of that oil in. And I'll admit, I'm still like cringing a little bit using the metal right on there, but you can see it's totally strong enough to stand up to that. Now I can just turn my egg out, no problem. Got a nice scrambled egg there

Um, let's let that sit. and again, no oil or anything, just directly onto the non-stick Um, so obviously, the non-stick has to be pretty good if it's going to keep that from becoming kind of a stuck-on mess. Now, I'm going to go ahead and scramble that egg up

Review and Demo of Calphalon Signature 12 in Wok

I really love the finish and handling, it feels really good cooking with this tool. The nonstick coating is really efficient, it makes cooking really easy and hand-cleaning a pleasure.

I bought this product a couple of weeks ago and I discovered the first chip on the non-stick coating. We have been using exclusively non-metallic tools and used the dishwasher. I will wait a little bit more to see if additional damages appear and will send it anyway for warranty.

Good handling, nice tool, but …

 Not by a lot though. Even with added oil, my eggs stuck a bit to the pan from the first use. And every time since then.  I liked my last two sets of Calphalon nonstick pans better

 From everything I have seen and read, the nonstick performance they show on those pans has a very short lifespan. But for these pans, it doesn't exist period.  The nonstick performance is better than for, say. an aluminum pan

 I suspect these will outlast those pans, and maybe in five years they will be about what they are now while the others would have been totally useless. Just a hunch looking at the surfaces of these pans so far. But I would prefer really good nonstick performance for a year or two and then replace them, than halfa$$ performance for five years. YMMV

 But it appears the design has changed as the company has discontinued the Contemporary line and replaced it with the Signature line. You can tell the difference by the number of bolts on the handle to the pan..

New Line is Heavy & Uncomfortable Handle

i qt size does not cover all the electric stove's heating coil. Altho' the perfect size for a lot of small or quick cooking jobs, it is not safe nor comfortable when hand stirring the pot. I have owned the 1 1/2 qt, same pot, which is the perfect size for covering the whole burner safely. B'cz this composition conducts heat so fast & hot, do not leave unattended, or bring to a boil, for example, cover & turn off, or simmer at lowest setting

Conducts heat faster than any pot I've ever used. Cleans easily when cool.

 The heat distribution is great and the non-stick coating works flawlessly. Only one problem, the silver metal handle is quite sharp at the tip. If you grab the pot without a glove, the sharp tip of the handle can dig into the palm of your hand. If you are an older person, this can cause a bruise

 If you grab the pot without a glove, the sharp tip of the handle can dig into the palm of your hand. If you are an older person, this can cause a bruise. Suggest using a routine kitchen glove when handling this otherwise excellent pan.

Great pot....Not so great handle

It arrived with a flaw in the cooking surface (a chip or tiny gouge or something). I used it anyway and after a few months started to have stuff stick and burn onto it while using. It was great for a little while.

Non-stick lasted less than a year

 This pan cooks really well and the surfaces heat up uniformly as expected. This assumes a uniform heat from below of course. We use gas flames and a double ring burner and it works perfectly.  2) Durability

 Handle it carefully and keep it out from over flame.  I haven't used this in the oven yet so can't comment.

 The outside is a bit harder to clean due to the surface texture but it will clean with a little extra elbow grease. I also found using white vinegar or a little lemi-shine mixed with water works well. Careful of the lemi-shine as it is a bit abrasive.  Caution, the handle can get HOT if over another flame or near another working pot or pan

Love it, use it all the time and not one issue.

  Additionally, from Calphalon and the other manufacturer (and you should know who it is), pre-heat your pan a bit before you add oil AND let the oil heat up before you add your food. Heated oil at the surface of the pan forms a better non-stick boundary between the pan and the oil, and finally the food. Gordon Ramsey said to heat your pan, then heat your oil, but he didn't say why. We have been doing that and IT WORKS

  Finally, the "other" manufacturer of our "Clad" Non-Stick frying pan we are replacing, would not honor their lifetime warranty saying "the pictures of your cookware show evidence of overheating".  Bon Appetito!!!

We have had several quality non-stick frying pans, and our Calphalon Signature Hard Anodized has held up the best. "Signature" is the better model of non-stick according to the Calphalon website. We use the Calphalon pieces we bought 5 years ago, everyday, and the non-stick surfaces still look like new. We don't use metal utensils on them but they are rated for metal

  One thing I learned from an amazon reviewer, and confirmed from two different manufacturers: DON'T USE NON-STICK SPRAY ON YOUR NON-STICK PANS. THe propellent will etch and ruin the non-stick coating. Excellent Non-Stick Frying Pan

 I was impressed. 3) Cleaning is a snap. So far, the nonstick works. I put it in the dishwasher, and no issues yet

 4) It's a nice size if you aren't cooking for a bunch of people.  The less good: 1) As other reviewers mentioned, the handles get warm. They don't get hot, though, so it's okay. Probably a side effect of being able to put this in the oven

 2) It's really great at even heat distribution. I cooked up a bunch of eggs (eight) and vegetables in it and didn't have to put it in the oven like with a frittata--everything got cooked. I was impressed. 3) Cleaning is a snap

Overall, a good pot.
