They seem like a good mix between something that will work for a more beginner person, but also will be something I can grow into and use for a while. I’m 5’7”, 170lbs male, and was looking at the 163 cm size. I’m planning on skiing at least once a week for most of this winter and spring.

Those are all good all mountain options that would suit what you're looking for. I do think that in the Midwest you can probably go even narrower to something very carving oriented, like the Wingman 78 or Head Supershape e-Rally or similar. If you want the all-mountain capability of a mid-80s ski though, the Wingman 86, Stance 84, Dynastar M-Pro 84, or Volkl Kanjo would all fit the bill.

I ski the m-pro 84 and I think it would do what you need. No metal, but still holds an edge great on ice. Also great in crud and off piste. I think the QST would be worse on ice but is forgiving and might be a better choice if you were out west often.
