I think you would also be served well with a ThinkPad Yoga X1 series. It comes with a pen, is a 2-in-1 and is a thinkpad. It has an average webcam though which is where the surface pro would have it beat.

I could list no SD card slot as a negative as I'd really love it but it's not like there was a whole lot of premium laptops with that in this category. Aside of this I'm very satisfied because it has beautiful build quality and display, very nice performance and keyboard + linux runs flawlessly and very fast on it. All and all even though I don't regret the purchase, I think I should have gone for a FHD version, or even a x1 yoga with full hd, purely for battery life reasons, which is the biggest negative of the laptop for me.

I would get the Lenovo Thinkpad yoga or X1 carbon they are really not in your budget (800-800) a hundred dollars more than your budget is the Thinkpad l490 which should serve you well just looks older design wise, I reckon you'll be okay with it. Has 256gigs storage 8GB ram and Intel integrated graphics which should run the Old Flight sim decently if not great. Personally I'd go with the bit more expensive options as they are solid builds and more upgradability as well as better spec wise, id urge you at least take a look.
