Matfer Bourgeat Black Carbon Steel

I prefer my De Buyer Mineral B Pro for searing as the Darto pans are more like a low sided sauter pan, but you can still sear just fine in the Darto pans. Darto does not make a classic frying pan unfortunately. The Matfer carbon steel pans in larger sizes unfortunately tend to warp more easily than other carbon steel pans I’ve owned thus I only own a Matfer in 22 cm - smaller size pans will not warp as easily.

It’s a waste of time. I do own a Matfer Bourgeat Black Steel CS pan, which I use for roasting nuts, heating up spices and for frying an egg or two (it’s the small 22 cm size) and it’s on its way to turning jet black, since I don’t wash that pan in detergent- like I do with my other CS pans and I never deglaze in it.

I have a lodge CI and bought a matfer bourgeat carbon steel pan to replace some old nonstick I’m phasing out. I use the carbon steel more than I use the cast iron because it’s easier to maintain, it’s lighter so it’s easier to use (and clean) and I get the same or better performance out of it than I do the cast iron. I am going to buy another carbon steel most likely as I’ve been totally pleased, and they’re not expensive.

This is my Matfer Bourgeat black carbon steel pan. I've had it for over 1 year now. It's my favorite pan and has replaced regular use of my cast iron pans. It's just a bit lighter, heats a bit quicker, and hold on to heat as well as I need it to.
