Ooni Fyra 12 Wood Pellet Pizza Oven

Hello everyone, I just got an ooni fyra 12 as a present recently and I tried to make some pizzas yesterday, I was very excites and had been preparing some 3 day dough. When I setted the oven up I read that I should lit it up for 30 minutes and then clean it before actually cooking, wich I did, but things didnt go as planned. I had it running for a good 2 and a half hours and it just kept letting out nasty black smoke and smelling like burnt plastic and a lot of debris.

We can’t get the oven to maintain high temperatures and good flame especially while stepping away for 5-10 min to prepare pizzas. 2.) When we did get a couple of cooks in, the outside of our pizza would get pretty scorched while the inside dough would be totally raw.

The biggest issue we had was the bottom of the crust burning and even the non-black parts still tasting like soot. Details:. - Our Fyra was registering around 900-920 degrees Fahrenheit throughout the 4 pizzas we made. (Being wood pellets I have no clue how to control the temp).

I’ve had the Fyra 12 now for 3 months and continue to struggle getting the oven to maintain its heat to cook 3-4 pizzas, even sometimes struggling to get the stone to the correct temp on first launch. This seems like a common problem for many. I have the oven on a table that can swivel so I can try and maintain strong airflow based on the wind direction of the day. I manage the pellets throughout the process so as to not overdo it and put the fire out.
