It wasn’t too bad after the repair. It’s become a sabatier “gyuto” now.

110% worth restoring. I'm not familiar with the M. Mogal Sabatier, but it looks 1950's or earlier, and those are usually quite excellent. This example looks in wonderful condition with near original profile and no major pitting or corrosion issues. I expect it has an amazing distal taper, like these old knives usually do.

Spine is straight, no cracks or huge gaps in the handle, everything is even and looks nice. No complaints here.

but seriously i mean i would probably go fujiwara fkm myself if i knew what i know now and was a kid with little money starting out and for some reason going to cooking school..., i would probably recommend one of the good quality western makers if they are new to knives and cooking an less likely to be careful and treat the knife like a tool you respect. a sabatier pro is pretty resilient. am i missing victorinox? where is it?.

I know sabatiers don't get much love around here but I really love them and I'm glad I picked them as my first knives so far, although I think this is probably as many as I'll buy at this point bc I don't think I really need any more of theirs and I'd love to get a tourne knife next if anyone can recommend me one. At this point I think I just love quirky knifes.
