 So considering the fact that this is still the exact same price as all those other entry level knives but it's a full tang, it's forged, it's VG10 steel, it's clad in stainless steel, all of these other little things, it's hand made, I think it's really a no brainer to get the Shun Sora if you want an entry level set of knives. This is a video where I show off the Shun Sora Knife Line and explain a bit more about it.

Essentially, the Shun Sora is the "budget conscious" Shun line¬— it is meant to be an entry level set for those who don’t want to invest too much.

Amazingly enough, however, it still uses VG-10 Steel (~61 Hardness) sharpened to a 16 degree angle like the Classic and Premier lines! It also has a stainless steel layer wrapped and welded around it that gives a gorgeous “wave” design to the blade as well as makes it extremely resilient to stains, rust, and pitting.

Like all Shun knives, it comes with free sharpening… that alone makes it a solid pick if you’re choosing between multiple brands.

If you want an entry level knife that is still “high end”… the Sora line is your best choice.

I have several other, much more expensive Shun knives and I should have spent more instead of trying to save money because it’s for our second home. I absolutely HATE the cheap plastic handle on this knife; it completely ruins the experience. My other Shun knives have nice wood handles. I would never have thought they’d sell something so cheap

 Some people complain that the polymer handle feels cheep, but these knives are perfectly priced for what they are. The polymer grip is comfortable and its profiled it such a way that it looks great. These knives truly show the mastery knife making at work at Sora. I also have a some Wusthoff Classics, Messermeister Elites, and a set of the Calphalon Katana

 I purchased the Santoku, 8" chef, 6" Chef, Utility, Ultimate Utility, bread knife, and pairing knife. Not only are they a great looking set of knives to display in your kitchen, but they truly do take your cooking to another level. Some people complain that the polymer handle feels cheep, but these knives are perfectly priced for what they are. The polymer grip is comfortable and its profiled it such a way that it looks great

 These really are great knives that are very easy to take care of with a little respect and a few steps, and these are possibly the best knives in the price range. These or the Messermeister Elites. Though the elites are a little more expensive than these. You will not regret buying these Soras'

 Do not put these knives in the dishwasher. When you finish using them. Hand wash them in soap and water. Hand dry them really good and put them back on your knife rack

 You should do that with any higher end knife because they will all get rust spots. Also I can not stress this enough. Do not put these knives in the dishwasher. When you finish using them

Best knives in this price range

 You need to hand wash these knives (yes, actually) and a whetstone to give these types of knives their proper maintenance (as required by useage) - I recommend a 1000/6000 grit whetstone to give the knife a good edge and nice light polish shine. Without proper maintenance your knife edges will rust, get beat up, and that sounds like a personal problem for you at that point. I could not be more pleased with these knives. I would definitely recommend these knives
