I ordered this knife based on the stellar reviews. I returned it. LOL. To me, the blade did not seem all that sharp (especially for a new knife) and as you cut down the blade got thicker so it didn't penetrate easy and I had to give it an extra push to cut through the onion

 If you are looking for your first real chef's knife, I would say to definitely consider Mercer's lineup: - the Genesis if you can justify spending around $40. - the Culinary Renaissance looks to be even a little nicer at around $50. - the Millennia at around $20. - the Culinary Ultimate is currently around $12 if you're really hard up

  The Mercers eventually stood out because they are a respected brand, and have some highly rated offerings at budget price points. Specifically, it was between this knife (the Mercer Genesis) and the Mercer Millennia. I chose the Genesis because of the forged construction and full tang, so it has a more premium look and might be more durable over time.  The difference between the Genesis and my old knife has been like night and day

 So I put on my consumer hat to find the perfect chef's knife. After some research, I decided to avoid getting a knife with a full bolster or serrated edge because of the potential to interfere with sharpening. I decided that a Japanese style knife would likely be too expensive. For German-style knives, something like a Wusthof would also be out of my price range

 Along with the knife, I picked up a cheap honing steel, and have been using it every time I use the knife. After about a month of daily use, the edge is still very usable but not as light saber-like as it was initially. At some point, I'll pick up a set of whetstones and have a go at them.  So far I am very pleased with this purchase

 it makes a great knife because of its super lightweight, weighing less than one else. Also, another nice thing about this knife is the price. It's available for less than ten dollars I would say between five and ten dollars so it's not much money at all. The steel is it's not a super steel or anything, but they come very sharp in Victorian Oxford Victoria Knox is very good about the quality control and it sharpens up very easily because it's not a super hard steel

 They make the handles in different colors. Let me bring in a lighter so you can see how with the size of the handle is so we have a relatively small handle. When I first got the knife, I was kind of turned off by how small the handle was. but after a while I got used to it and now it doesn't bother me at all

 So this is the Sheepsfoot version of the blade. They make a number of different blade shapes. I Really like this blade shape because it works great for cutting on a cutting board. If you drag the tip across the cutting board, let me bring it in this in to demonstrate

 I had you know, really expensive paring knife and that parent knife got lost and I needed a paring knife because I was going into work and I picked this up at a hardware store. I didn't know the brand, I didn't know the name and I found that this knife was razor sharp. It did not break the pocketbook, super flexible, stayed sharp for a long time, and was able to do a lot of things in the kitchen that professional paring knives couldn't do because of its flexibility. It's one of the knives that I recommend to first-time cooks

 I love Dexters' still, and will still not hesitate to use it. However, this season I vowed to try this Victornox knife. I put it through the ringer and it worked SO WELL!  *To the Review*  1.) Unboxing:  PRO:Unboxing the knife I was pleased to find the blade in hair cutting sharp condition

Disclaimer: Not a normal review, this is a vegetable knife, but also a very versatile butcher knife! If you are queasy, or anti-hunting/meat - probably not the best for you to read so avert your squimish little eyes, por favor.  As an avid hunter/outdoorsman who processes their own game instead of taking it to a butcher, finding the right, no, perfect tools for the job make it much more pleasing and satisfying. If you don't like reading, let me just tell you right now, buy this knife; I have tried so many types of knives for processing deer and this is the best one hands down!  During the 2020 hunting season I went to the butcher with a friend and noticed that ALL the butcher hands were prefering to using this knife and I mean they USED them. They struck bone, they dropped on the concrete, they were stepped on and tossed into a bin, they were abused

 Whalla, sheath!  1.) Field dressing/gutting deer review: The first step to gutting deer is to make an incision that runs from the tail, to the middle of the ribcage. Making this first cut proved the knife's thin blade and scary sharp edge made it perform like a scalpel. I was very impressed

Best Butcher Knife? Yes!

 Don't waste your money on anything more expensive than $10 because with the amount you'll be using these, like David Chang (famous chef) said, you'll go through them.

  Materials: 10/10 Beat them up and use them for just about everything because this knife will be able to take it. that extra +0.75" length means that if you actually choose to sharpen these knives, you can have it sharpened and ground down to 3.25" like the smaller version

 A nice thin knife (< 2mm) makes this incredible for just about anything. Because of its shape and thinness, it allows for a quick cut followed by more quick cuts as opposed to a cut followed by removing your sliced piece off the knife.
