The Brod & Taylor Pro is a robustly built, highly effective, good-looking, manual knife sharpening tool. We like that the unit quickly sharpens a variety of knife styles, including paring knives, serrated bread knives, and chef's knives. There are 3 sharpening tiers: course, hone, and polish. One can reshape the blade's edge as needed by changing the angle to meet one of these tiers as it passes through the sharpener. Moreover, the spring-loaded arms all but guarantee a consistent blade bevel. Lastly, the sharpener loses only half an inch of blade contact where the handle contacts the sharpening arms.   
While we're chuffed with how easily the Brod & Taylor sharpens dull knives, it does have some issues. Firstly, it doesn't sharpen scissors &mdash; this is the biggest knock against it. Also, despite the heavy base and rubber feet, the tool requires two hands to operate safely and effectively. There is also a bit of a learning process to effectively hit all three sharpening tiers correctly. Finally, the Brod & Taylor costs about as much as its electric counterparts. That said, this piece will be well worth the cost in an active kitchen where sharp knives are a must.

 It's just a superior design, in my opinion.  So with that out of the way, now we get into the details. Like I said, this style of sharpener definitely works, no matter how much you pay for it, so the question is, would I buy this one again, or would I go the cheaper route?  Well, looking at the two, this one's (I'll call it the Classic from now on) base is made of tough nylon (a very strong, durable plastic that you can make gears and tools out of), and is formed into a nice shape. It looks pretty good, has a classy matte finish, and I think it will hold up well, despite being plastic

 I was very impressed with the performance of this style of sharpener. I'm sure that you could do better with stones, but I don't know how to do that, and honestly I don't have any use for a sharper blade than these will create. They take dull knives and turn them into deadly knives in about thirty seconds, so, kudos on all counts. To get a better idea for how good these are, I've also got a chintzy little sharpener that uses rods to sharpen

I've been looking for a kitchen knife sharpener off and on for years. This one finally caught my eye and the order was placed. It arrived with easy to understand instructions (as there is some technique involved with successfully using this tool). Knives I thought were hopeless turned out to be fabulous

I sharpened all our kitchen knives in about 15 minutes - they included Chicago Cutlery (the old versions), Cuisinart, large set of Forstner (now owned by Victorinox), and Wusthoff. 5-8 strokes with the tip pointed down (coarse), then 5-6 strokes with the tip pointed up (fine), and then half a dozen or so with the blade level while you hold the sharpening edges apart (hones to a razor edge). Yeah, you could spend a lot of time to put a perfect "edge" on a knife, but why go through that when this sharpener can put that sharp edge on a knife in a few strokes? Really, folks, you should give this thing a try

 In addition, I was always apprehensive about the amount of steel removed by the electric sharpener. The user controls the sharpening much better with this manual one. Also, It is much handier to keep this accessible on the counter, rather than digging in a drawer or closet for the electric model. And, it appears that this Amazon model is not made in China or overseas

We have had many knife sharpeners, including the top rated (by Cook's Illustrated) ChefsChoice pro sharpening station 130 electric sharpener. This smaller, handsome little sharpener does at least an equivalent job of sharpening, with a much smaller footprint--it can be left on the counter without sacrificing 3 times the counter space and taking up an elecrical outlet, as does the Chefschoice. In addition, I was always apprehensive about the amount of steel removed by the electric sharpener. The user controls the sharpening much better with this manual one
