 It slid right out of the pan onto my bowl of grits, [, Music ] and later the second evening i decided to cook a nice big, thick juicy hamburger, so that would be cooking red meat in the pan. For the third time, i also got some more potatoes going in my maffer, and i kind of like seeing the pans flying in formation and working together again and note. This is an electric flat top stove, it's the one. We have, in our downstairs note that the pans are both working very well on the smooth top electric stove in map

 What they say to do is scrub the pan with very hot water, get all that protective beeswax off. There then put a millimeter of oil in the pan and bring it up to a smoking point. Turn the burner off, wipe it out and you're ready to go. That'S your initial seasoning all right

 What you don't want to do when you swirl the oil around, is swirl it out onto your finger. I accidentally did that one time and brought my finger up to its smoking point: hey, that's not funny! So now you can see the pan beginning to smoke once it starts smoking really! Well, you dump that oil out and you take some paper towels and wipe and wipe and wipe and wipe and let it smoke just a little bit more and now we've got an initial seasoning on the pan. I think we're ready to do a little bit of cooking, we'll start with an omelette [ Music ]. I don't see any sticking so far matter of fact i can rotate the omelet

De Buyer Mineral B Seasoning and Cooking

 De Buyer has a good reputation for the quality of cookware and the Mineral B line came highly recommended by members of an online foodie website, so I decided to give De Buyer a try. The rim of the pan is 3 mm, measuring from the outside rim edge to the inside edge of the rim. I did not use calipers to measure, just a standard plastic ruler marked in mm and cm.  I am going to make heavy use of the pan in the next two weeks to see if actually starts living up to its reputation. I have spent 35 years cooking with Farberware, so maybe I am not just used to this type of pan yet.

Not Sure What To Think Of This Pan (Yet) : Overhyped or Worth It?

great heft; beautiful design

I am not a trained chef but do enjoy cooking. The bottom of this pan is not flat which causes all the cooking fat/oil to run to the edges away from the food. Maybe that is by design and preferred by some folks but it is a flaw IMHO.

I expected more from this. My daughter has a set of De Buyer pans and she loves them. This pan is too small for most use. Nice and heavy

..so if you pan fry something then toss it in the oven to finish cooking the handle will 'melt'.

but when I took the pan out after the oven at about a few hrs later but still at 250, the pot holder 'stuck' to the handle...there is some thick brown silicon coating on the handle, which on the stove top helps keep the handle temp down, but in the oven it melts and a dish towel, pot holder, rag etc will stick to it

I would recommend another brand that has NOTHING on the handle to avoid hot temp and having your dish towels still like glue to the handle when you go to retrieve it

Maybe I just got a bad one.

 Even after the initial seasoning, it took time to build up a good non-stick surface. But it's well worth it; Patience really pays off in the long run. I can cook omelets and even scrambled eggs now with very little stickiness. And I can sauté at high temperatures without worrying about damaging the pan or releasing toxic fumes

I own the plain 9.5" (24 cm.) Mineral B version of this pan. I'm assuming the actual pan dimensions are the same

 Too much gunk kept building up on the surface of the pan. Then I switched to the large Oxo stainless steel flexible turner. This works perfectly in getting under the omelet without damaging the pan's surface.  To maintain the surface, I just wash out the pan with hot water and usually a teflon-safe sponge

Yes, it's heavy, but not as heavy as a cast iron pan of the same size, and the very thick steel in De Buyer pans means that they won't warp, which almost all my Teflon pans have done, bulging a bit in the middle (I have a gas stove). The Eiffel tower handle is a very nice touch. It doesn't get get hot and provides a good grip - and looks much better than the traditional handles on De Buyer pans

The best thing with carbon steel is that you can redo the seasoning if ever needed, while damages to the surface of a Teflon or other non stick pan can't be repaired. And, of course, the only material that may move from the pan itself to my body is iron, instead of strange chemicals

Really the best pan I have owned and I’ve got some more expensive pans that just don’t compare for hot even cooking. I seasoned with the potato salt oil method matfer recommends then I just preseason before cooking (Christopher Kimball rec.) by getting some oil hot in it then wipe it out let it cool a little then cook. I know debuyer says cook red meat 10 times then you can cook eggs but with this matfer method I’ve so far only cooked eggs in it no meat yet
