 The oil filtration system allows you to drain and 'clean' the oil so that it can be re-used.  I recommend replacing the oil fairly frequently. Fresh oil is better for deep frying than oil that has been used five or six times. There are a lot of different types of oils you can use in a deep fryer including vegetable oil, coconut oil, sunflower oil, peanut oil, and lard

 You want to make sure that the smoke point of the oil is at least as high as the temperature in which you are cooking things. Such as frying chicken, the best temperature is 350 degree Fahrenheit for the oil, so you want the oil you use to have a smoke point of at least 350 if not higher.  My own opinion is that replacing the oil regularly is as least as important as the quality of the oil you use. So you may want to balance the cost with the use of a healthier oil

  Be careful of the lid since it is not attached to the fryer on a hinge or anything. So you need to take care when moving it around so that you don't get hot oil splattered on you.  On the whole, this is a good, decent deep fryer. It feels fairly sturdy but not quite professional grade
