Nesco vs-12.  Maybe a little slower than the foodsaver, but it pulls a better vacuum, doesn't overheat, and you can even set it to double seal.

I used to have a FoodSaver FM5380. It broke and I tried a VS3180 (Costco) and it was rubbish so I returned it. That was 2 years ago. I have since turned vegetarian and don’t SV meat any more. One thing I still miss once in a while is the ability to vacuum sealed block cheese. I die a little every time half a block goes to waste.

Anyone has any recommendation for a small, cheap vacuum sealer that’s good enough for that sole purpose? I mean, it really isn’t frequent enough to justify a countertop model both in terms of price and real estate. I looked at (Amazon) some handheld ones that use special valves bags but the reviews are all over the place. I’m hoping to hear from someone here with actual experience.

Oh before we go there, water displacement doesn’t work for block cheese. They still mold. It really only last if the air is sucked out.

Vacuum sealer recommendation

 Our hamburger meat that we vacuum seal also was too powerful and it sucked out all of the juice even though I had the setting on moist.  I will be returning this as I am not happy with how much suction it has and I cannot for the life of me figure out how to change it, even putting it on delicate / soft suction.  The bag holder has a little slot that you put the roll through, but as soon as you cut a bag you have to lift up the lever to get it to feed through again to make another bag. The sealer is at the front edge of the machine, and the cutter is at the back, so you can't seal a current bag and the instantly cut a new bag to make more than one quickly

I bought this to replace my Food Saver that accidently got water damage. I am not to happy with this product, the suction of it is was too much. I used my Food Saver for a few years with freshly picked blueberries and it never crushed the berried. this machine crushed the blueberries into a pulp

 I'm disappointment with how much suction it had and even the "pulse" function is too powerful. I have done zucchini that I cut into chunks and it suctions the water out of the fresh veggies. Too much suction

So I know this is only tangentially related to sous vide, but wanted to get your opinions on what my best option might be for a &lt;$100 vacuum sealer.

So far, I've found the following:

Looking for a vacuum sealer for &lt;$100

  The double seal is nice but the seals are thinner than my food saver.  The suction power is good and the unit is quieter than my food saver.  But the worst thing is a key missing feature. You cannot remove the drip tray to clean it out

 It feels like a 1960s communist bloc version of a vacuum sealer. It does the job, but definitely isn’t going to be the sealer for a hunter or other heavy user.

  I attempted to store keilbasa, potatoes and sauerkraut with most of the juices drained when placing in the bag, however the suction being strong, which I expect drew the liquid into the sealing area preventing the bag from sealing all the way across. After the first failure, I thought I would check the settings and had it on normal with the moist setting. I decided to try the double seal function, but again, it did not seal all the way across leaving about an inch in the center that was not sealed. As the contents of the bag was still under pressure, I was able to manually seal the bag on two bags successfully as most of the air had been suctioned out, it was good enough for me at this point

Does this really do liquids well? Not as expected, but we'll worth it!

 Is it worth the price? Only time and continued usage will answer that. Oh, instructions warn you not to seal continuously or unit will over heat. So plan on giving it a space to cool off if doing up a big grocery run.

I was so excited when it came, I have sealed the meat and corns the next day  ( Aug 25th ). It seemed seal good, tight. I have removed  the packet of meat from freezer to the fridge yesterday, in this morning (Nov 2nd)I found the meat thawed out, the bag was still seal but not tight any more. Does it suppose to work like that ? I have expected the food should be still sealed tight  when it thawed  out like before I freezed  it

 As someone else pointed out, there is a place for a hose storage but no hose came with it. And the power cord is very stiff. Good suction though. This unit replaced a Food Saver I had for I’m guessing 20 years that stopped working
