So all in all the Shimano grx looks to be a super cool. Super solid group set.

Which is not that high, if you are going riding with you roadbike friends, but works just fine for daily use. The bike is heavy compared to the big brands (at 10.4 kgs for the former version), and the Canyon Grail which weighs 9.5 kgs. The Canyon itself is well specced for the price, being direct to consumer. The 105 derailleurs lack the clutch that keeps the chain tightened, which is on the Shimano GRX gears.

Surly: Cable Pull Disc REI: Hydraulic Discs (I'll take GRX Hydraulic here; but cable actuated brakes are easier to work on - so for long backpacking trips I could see why one might prefer cable actuated discs. The REI bike has a dropper post - which may be a big plus (it would be for me).

The weight saving is something you don't want to miss. If you want to go a bit faster look for a GRX with 2x11 and a big crankset. 1x11 drivetrains are a bit more limiting when it comes to watting down on the roads.

If you are concerned about the climbing gear rest assured that the groupset that comes on the 4130 all-road is just a rebranded Sensah SRX and it will shift an 11-48 with absolutely zero issues (some people have even gotten it to work with a Deore 11-52 11 speed cassette but they reported that the shifting was problematic at times). As for brakes, single side mechanical disc brakes in general are just not great (rim brakes are honestly superior) but, you can do what I did and replace the single-sided mechanical calipers with cable operated hydraulic calipers from Juin Tech or Yokozuna (Literally the exact same caliper but with different branding).

LBSs will usually/sometimes specialize in one or two brands/companies (e.g. one of my LBSs mainly only sells Giant and Trek). The Shimano GRX groupset I believe is very similar to the 105 (both are used in new 2020 and 2021 gravel bikes) and what you’re getting there for the price and with a carbon frame set seems fair market price if that’s your price range.

It's going to be ok if you'll ride mostly on tarmac and light gravel. But if I could afford it, I'd get something more expensive with a 10 or 11 speed Shimano GRX groupset.
