CLEANING
Victorinox Swiss Army recommends washing all knives by hand. For best results, hand wash your knives with a soapy cloth and dry immediately. 
While Fibrox Pro knives are dishwasher safe, we recommend hand washing as dishwashers are designed to spray water at a relatively high pressure, which can jostle the silverware and cause the knives to collide, dulling the edge.

SHARPENING
For optimum performance, knives should be honed after every couple of uses. Proper and frequent use of a honing steel will keep your knives sharper and performing at their best.

The blades of this Victorinox Redwood steak knife set are incredibly sharp, thin, and impressive. This knife set is only held back by mediocre dark Walnut appearing Redwood handles (don't see any red in them) with an equally mediocre dull finish (they do not remotely appear like the picture shown in this advertisement). Although adequate, the handles could have used a little finer sanding and several coats instead of one of the oil stain from the factory. You want to avoid using mineral oil as it will make the handles appear black (unless you like that)

 The finish is adequate at best.  The photo provided in this advertisement erroneously makes the Victorinox steak knives look like I wish they actually did. Instead, the finish is more like the Victorinox serrated knife set that I show in the first photo below (without the good grain). Look elsewhere if you want high quality knives with high quality wooden handles

Excellent Sharp Quality Blades,  So-So Handles

 It's a very lightweight and well designed knife. I didnt find it had as sharp of an edge that I would have expected for the price and reviews. I just had to pass them on a finishing stone to get them up to par. We cook and use our knives a lot and these replaced our Chicago Cutlery blades we have had for 17 years and had received as a wedding gift

 I dont think these will make it 17 years. While ideal for steak the edge profile is so thin soft items like butter stick to the sides. I have a little cheap Mercer pairing knife that has a thin blade also and butter wont stick to the sides of the blade like it does with these. Thinking it's just a lack of finishing oversight on their part

Handles smell bad when wet

I am a big knife guy. I love nice, hard knives. I treat my knives well.  But steak knives such as these are often used directly on plates (not cutting boards) and tend to dull or chip quickly, so I wanted something that was functional, classy, and easy to work on without being too expensive (I'm NOT using my 63 HRC blue steel forged knives on stoneware plates)

Mine did not come in the attractive dark box shown, rather they arrived in a cheap, white plastic holder from which they had come loose during shipping and were tumbling about in the box. Cheap, Poor Quality for the Price

 You will likely need to use lots of mineral oil. BTW, you would NEVER want to put theses in the dishwasher.  Overall, a pretty nice mid-range steak knife for what I consider to be a decent price.

These are nice steak knives, but they are not expensive, fine German knives. If you are looking for the heft of an expensive Wusthof or Henckel, you need to buy one of those. These will not satisfy you. I have to admit, I prefer those, but, for what they are, these are quite nice

 Found these as a great deal compared to other retailers. The only thing I don't like (and thus the 4 star review) is that the handles have a strange texture-- the rosewood (or whatever kind of wood it is) feels like it has dried out after a few uses and hand washes and the texture is rough. It makes me feel like if I were to run my hand in the wrong direction on the handle that it would give me a nasty splinter. So far no issue with that, but I wish the handles were smoother or more polished
