This is Lyle with NoHippieBBQ and I just got done watching this review on that Weber Smokey Mountain And I made a mistake and near the end of this video You're gonna see where I said you could put the brisket on at 8 and wake up at 12 in the morning I meant you could wait you could put the brisket on at 8 and wake up at 6 in the morning and Still be cool on temperature Primarily if you aren't using the water if you use the water that's going to cut your Cut the length of your cook dip down to about it's going to It seems to take it down about four hours So you can go four hours longer without the water than with it, but anyway check out the review What's up everybody? I bought this smoker for $50 on Craigslist Knew they're about $300 and at $300. I think it's a value this smoker is as close to sedative and forget it as you can get without going to a pellet grill or Or like what what do you call those things electric smokers But anyway, let's kind of get into like the inside of this thing So first of all it comes in a few parts. I'm not sure how it comes from the store, but you have the lid This greats a little dirty

Weber Smokey Mountain Review & How To | WSM Smoker

Smoked a tomahawk steak. Result was excellent.

 If temps run away on you, just adjust the vents, and if it really gets out of control, add some cool water to the water pan. I can dial the smoker within 20 degrees of anywhere from 170-300. If temps drop on you, just give the fire a bit more air. Very small changes make big differences so you can really finesse it

 The water pan is huge, it blocks access to the charcoal chamber, it’s nasty to clean out (pro tip - get a pizza pan that will set on top), and it doesn’t have a flat bottom, so unless you’re filling it in the smoker, it’s gonna roll all over. Why wouldn’t you fill it in the smoker? Well because if you are fighting cold weather, boiled/scalding water will be a huge boon to your temps. I don’t own a stock pan large enough that could fill this thing in a reasonable amount of time, so I set it in my sink and fill it with hot water, and it rolls all over. Did I mention how nasty this thing gets if you don’t cover it and stop all the drippings?  My next big gripe could be solved if the water pan were either smaller or higher up in the cook chamber

Smoker For Beginners

Just received... But dude!

 There's a damper on the top here and then there's three of those on the bottom along the base as well. I mean you can see obviously you got the Weber logo on your handle there as well. So that silicone grommet where you can put in the external thermometer that basically works with the Weber Connect smart grilling hub. So you can use your phone and bluetooth and stuff and monitor that way

 The good thing is too this really doesn't take up too much room. It's got a very you know compact base and it's pretty vertical so you're not taking up a large footprint wherever you've got this. So we got this out here next to this Weber Spirit II grill and you can see it barely takes up any room on the patio. So you guys can see here we got some chuck roast out here on the Weber smoker and we have some external type of thermometers going into here to kind of track this and stuff

 You know keeping that open is going to allow for more heat and everything so you kind of control your heat that way. This weighs 39 pounds itself so it's really not too heavy for you know an actual smoker like this. Like I said it doesn't really take up a whole lot of room either. This has been in operation for years you can see it's held up very well obviously we keep it covered outside and everything like that

I currently have a webber and a UDS.  I enjoy smoking meats quite a bit but honestly grill much more often so I tend to use the webber wayyyy more.  When I need to do a butt or some ribs I fire up the drum but honestly I can get the same results on the webber.  So I have been considering getting rid of the drum.  Now, I just came across the masterbuilt gravity smokers/ grill.  Those who use them, could this be a good replicant for both the webber and the drum?

Gear question - Webber Kettle vs UDS vs Masterbuilt Gravity

 With this you have to have the lower, briquette grill in place, then the ring around it; place the coals so there is a circle in the center of them (check on YouTube for the Minion Method this will save you coals as it burns at a more consistent temp and more light as time goes on), then you have to light the coals in the chimney, pour that in the center; place the bowl, fill with water; cover, wait; put on meat; watch and adjust the vents (which may only need little tweaking). Yes, it all sounds pretty humbug and at first it it. Now I've got it down. It's just part of the process and it is worth it

Unfortunately many good american brands are hard/impossible to find here so I was wondering if anyone knew of any solid kind of smoker that is also sold here or perhaps what to look out for when buying (I read thickness is important)?

They do have e.g. the weber smokey mountain, however I'm currently more interested in an offset smoker in the 500-1000€ range. 

Any recommendations?
