It'S also a great way to make french fries. If a mandolin couldn't make crinkle or waffle cuts that wasn't a deal breaker, but it was kind of a nice bonus and we did use it to make chips and fries. So now for the bad news

 We sliced foods of lots of different textures, including tomatoes, potatoes, fennel beets and eggplant, and we use them to julienne, celeriac carrots and daikon into thin strips straight out of the box. Some mandolins were easier to use than others. They were intuitive to set up and use. They had accurate, clearly marked measurement settings, whether that was in inches millimeters or both all the mandolins came with straight blades for slicing and that's the type of cut we use a mandolin

 Finally, bigger bulkier mandolins sometimes sat more securely on the counter, due to their heavier weight, but they were more cumbersome and they took up more storage space. In the end, we had a few favorites each with different advantages. Our top performer overall was the super ben reaner. Mandolin slicer and this had the sharpest blade by far and it sliced, through even the toughest foods like butter, sliced evenly and consistently and three julienne blades, give you some versatility best of all it slices in an incredibly wide range of thicknesses

I should have known that a less expensive mandoline was not going to suffice. This one wouldn't even go through carrots for julienne slices without shredding and getting stuck! Bits of mangled carrot everywhere. Not even willing to try out on potatoes at this point. Spend more $ on one with the "V" blade

 Not worth the trouble. Not even good enough to give to grown daughters who love my hand me down kitchen tools. What a waste.

UGGGH Don't Just Don't

 I think it's great for home use you're able to get it as a beginner cook and in a professional kitchen and keep with for a long time. You 

 We use this to julienne. We use this to slice, it does come with a safety guard behind it. It actually has adjustable slats that you can put different blades in the different blades will give you like a julienne cut or a thicker long, what they call a spaghetti cut and then underneath here there's a small knob that you turn up and down. That gives you the thickness of the cut the two screws on back

 You can take them off. We actually take these off and sharpen them and to keep them constantly sharp. One of the reasons people are afraid of them is because the blade is so sharp, but it's a dull blade that that hurts you more than a sharp blade, very easy maintenance itself. This particular brand is to me the gold standard in kitchens, because it's so small, it's compact, we use it when we're cooking on the line, but we also use it to prep with

 I ordered the Jumbo slicer, model BN-120. I expected it to come with extra blades for making julienne/matchstick vegetables. But the Jumbo only comes with one regular blade for slicing.  I was confused by the other models and photos that show multiple blades

It's only after I received the item, did I go back to the description and realize that the extra blades are not included with the Jumbo model. Again, the Jumbo model only slices and will not do julienne/matchstick style vegetables

Please note that the Jumbo model (BN-120) only comes with one blade.

 For a family/group use non-comercially I would recommend the Borner hands down...Borner V5 Plus Set straight from the manufacturer

 The other blades are fairly useless, which is disappointing as I wanted it for julienne potatoes. It sort of rips them. Since it is not so great with wider veggies, I intend to buy the wider slicer that doesn't have the extra blades.

 After heavy use the Blade will need to be sharpened, if you intend to cut more delicate items like Tomatoes. But overall this brand holds up very well.

The Fearful Mandoline! Trying to get people to use this device is easy until they lose a piece of their finger. But as the old saying goes "you gotta get back on the horse". This is very efficient tool that give you precision uniform cuts, but can bite if one is not careful. Use the finger guard! The blade comes sharper than the the sword of Musashi Miyamoto and the extra width is great for handling those larger onions, or Fennel Bulbs

 Upshot: most wider slices (potato, beet, wide veggies) are not a uniform thickness. I'm OK with this as a home cook, and the variation is not huge. But after years of hearing and reading about the Benriner brand, this seems like too obvious, too easily fixable an issue to have let pass.
