Sauteing vegetables was a cinch and I was able to get a lovely char on them. For cooking fat, I rotated between peanut oil, butter, bacon grease and ghee. Thanks to a silicone handle sleeve I purchased along with the pan, I didn't have to worry about the handle getting too hot, though I could still definitely feel some heat radiating through during more intense fry-ups.

De Buyer Carbone Plus - end result after 4 weeks of daily use

 It's great for blackening fish, cooking chops or filet mignon. But stay away from acid foods like tomato, wine, citrus and vinegar. It will destroy the seasoning on the pan. Cooking gravies and reductions can also destroy the seasoning which just makes more work for you to reseason

 It can be non-stick but you really need to know how to cook with it and clean in. You need to cook high fat content meals. It's great for blackening fish, cooking chops or filet mignon. But stay away from acid foods like tomato, wine, citrus and vinegar

 So keep your non-stick but realize it is a limited life. However, your De Buyer will last a lifetime, just remember it's not as versatile without proper care. You will need to reseason it on occasion.

I bought the Carbon Plus since I needed a 22 cm for nuts roasting and spice heating and the De Buyer Mineral B Pro is only available in 28 cm, 24 cm (which I already own) and 20 cm (which I find a tad too small). I could get the regular Mineral B in 22 cm, but wanted to try the Carbon Plus model, and I’m glad I did since it’s as thick as the Mineral B at a lower price and with a slightly darker look to it.

The matfer bourgeat black carbon steel fry pan 11 7/8 is pricey here (over or around 150$ CAN on Amazon), so it is sadly not an option.

But there is the Ballarini Professional 3000 (62$) and the De Buyer 22303 Mineral B (83$) that are both available in 28cm. 

I intend of using it as my daily driver, eggs, meat and saute some mushrooms and vegetables (the cast iron skillet I use is giving me scares on my glass oven top, as it is super heavy).

What would be the better choice between those 2 (as the price is super close and a non factor at that point)?

A carbon steel crepe pan - de Buyer has a great 12 inch pan in the "Carbone Plus" line that's oven-safe - would be a great idea for those "need to get spatula under the food" situations

8 5/8 inch Matfer that I use for omelettes or 1-2 fried eggs

Cast iron skillets 8” and 12” (field co, so a little thinner and lighter weight than lodge)

And SS 11” fry pan.

I’ve started cooking salmon more often (for 2 people) and had mixed success with the large CI skillet. The high sidewalls make it difficult to get under the filet sometimes. Same for the SS fry pan (plus it’s stickier) and my matfer is too small for more than one small filet at a time.

I also HATE rivets, so was looking at another matfer - but not sure if I need the 9.5”, the 10.25” or just get the crepe pan (9.5”?) for added versatility. I’m concerned about warping in the larger sizes? but I do cook on gas burners.

Alternatively I could do solidtecknics or darto?but they look more similar to the CI skillets I already have with more vertical sidewalls.

Which pan should I get?

Very well constructed pan

Prett thick and heavy, slightly warped (center slightly elevated), so it never warps the other way around and always stays flat on the cook top.

any definitive rule on glass cooktops and carbon steel?  My tale of woe is that I had a beloved matfer, that I seasoned with the potato peel method, that I used for years.  It was seasoned and cooked on a glass cooktop.  I used it on a friends glass cooktop  and it warped irreparably.  Ordered new pan.  I had also bought a new range with a glass cooktop.  Peeled lots of potatoes.  Warped almost immediately at start of process.  Continued and tried to use but the seasoning never fully took.  the warp in the pan really fucks up simple cooks in terms of uneven temp.   Recycling bound.

Research suggests:  heating it very slowly and making sure the element is not bigger than the cooking surface.  I really want to get a new pan but do not want another warped piece of garbage.

the glass cooktop debate

 I got this BEAST of a skillet for when more of the family comes over for dinner. Debuyer was recommended to me by a head chef of a French restaurant. So glad I took his advice. Now I cannot say enough good things about theses skillets
