De Buyer Mineral B Pro Carbon Steel

My wife wanted to move away from the coated pan, to something more healthy. So after many videos I choose a de Buyer mineral B. This one to be exact.

I did consider getting the Ballarini Carbon steel pan, but it was only available in one online store in my country and was sold out, so I skipped the idea. The De Buyer Mineral B Pro pans have stainless steel handles, so they’re oven safe. The Darto pan is more like a high sided frying pan or - if you will - a low sided sauter pan, so it’s not ideal for high heat meat searing, but it can certainly be used for high heat meat searing just fine. But I prefer my De Buyer pans for high heat meat searing since they have that classic frying pan shape with the lower flared out sides.

I prefer my De Buyer Mineral B Pro for searing as the Darto pans are more like a low sided sauter pan, but you can still sear just fine in the Darto pans. Darto does not make a classic frying pan unfortunately. The Matfer carbon steel pans in larger sizes unfortunately tend to warp more easily than other carbon steel pans I’ve owned thus I only own a Matfer in 22 cm - smaller size pans will not warp as easily.
