.. pieces of meat "burn in" white marks where they were placed initially, and these white marks just don't go away by scrubbing. Perhaps steel wool would do it but I don't want to scratch my pan too much after every cooking

 First, the weight. At over 5lb of weight, it's quite unwieldy - I'm always scared of breaking my glass stovetop or my granite countertops, but by now I got used to it and handle it with both hands. This weight gives it very impressive heat distribution and amazing searing ability. I cooked all sorts of meat on it, and every time I get amazing brown crust and I can make delicious pan sauce with fond

 When preheated well (it takes approx 4 min to preheat on my glass top electric stove at 70-80%), meat sticks to the pan when first placed on it, but a few minutes later, it releases when it's done searing.  Great cooking is great, no sticking is great too but..

Disclaimer: I'm posting this review on Amazon to share my thoughts, but there won't be a "Verified purchase" under it as I didn't buy this pan on Amazon - I got it on sale in another store for $175. Not Flat Bottomed as Claimed

I enjoyed reading some of the other reviews about this pan and have to say most of them are very accurate. The only exception I find is that the pan doesn't seem to be as easy to clean as some would claim. It is a stainless steel pan, so if something gets a little too hot or you don't have enough oil it will stick (eggs come to mind). I now use a carbon steel griddle for eggs which works so much better with less oil

To clean the Demeyere proline, I found that one of the blue scrub sponges is usually sufficient for anything that gets stuck (it is designed to scrub but will not scratch the surface of this pan). In one particularly bad case, some canola oil splatters got very sticky and I couldn't get it off until I used some Dawn Power Dissolver

 The pan looked absolutely new again.  Go to Sur La Table to see these pans in person, then buy it for much cheaper here at Amazon. You will see that the handle is the most comfortable of anything out there. The 11-inch has a helper handle

 I have purchased quite a few also as gifts over the years, which is another testament to how much I love them. However, after purchasing the nicest LG induction stove, I can only use the smallest of the skillets at all, and it doesn't really get that hot. The others do not heat up at all on any of the burners. This may be specific to my stove

 Emails to the manufacturer have never been returned. I have not had the opportunity to try them on other induction stoves. I would give them 6 stars if not for this issue.

They are my favorite skillets of all time: amazing heat distribution, tough, works of art, clean easy, just simply the best of the best.   Compared to my All-Clad, it heats a bit faster, more evenly and retains its heat far better. Honestly my 5 ply All-Clad seems second rate. There are some very in-depth reviews of this skillet complete with thermograms and it simply beats the All-Clad and is a near match for cast iron in heat retention .  You will need to retrain yourself however

 As possibly the worst cook in the country I can speak with some authority that if you get this pan "searing hot" like a recipe told me to do - you get a steak turned instantly to charcoal and a blackened surface that no soaking, barkeepers friend will touch. Steel wool and 15 minutes got the mess off but I'm not looking for a "show pan" and it might be useful for me to learn how to cook. The even heating of this pan helps as I struggle to gain basic skills. My philosophy has always been if you are new to a craft get the best tools and the Demeyere is a "best tool"

It is the only pan I've ever seen that is given a 10 year warranty when used in a commercial kitchen (30 years for home use) and evidently the warranty is actually honored.   The inside cooking surface measures at 7 1/4" at the bottom and the inside diameter at the top is 9 1/2". This is a larger pan than you might imagine. From outside lip to lip it measures 10 1/2".  This pan is rated higher than All-Clad in every review I could find (there are not that many) and is probably the best fry pan you can buy

  I don't like it, I love it.  With an induction cooktop, this very heavy cookware heats quickly and evenly, all the way to the edges. On an electric cooktop it does the same. It browns meat beautifully

It is heavy - not as heavy as something like Le Crueset, but much heavier than the stuff you buy locally. Take that into account if you are elderly with limited hand strength - this isn't for frail individuals

 On an electric cooktop it does the same. It browns meat beautifully. Burned food (yes, I wasn't watching it closely enough) actually comes off without leaving a mark of any kind on it, after a light scrub with a teflon pad or some BarKeepers Friend.  A similar incident on a $60 pan from Bed Bath and Beyond left the discolored stainless steel aura all over the inside of the pan that could not be removed with any amount of prayer or scrubbing

Worth the Price!

 Yes, they're heavy but quality cookware has to be heavy. Demeyere products work well on both my induction and gas cooktops. Unlike my fancy French brand carbon steel pans, these stay flat on induction burners and give me the best browning and temperature control I have ever experienced. I also own a Demeyere Atlantis saucier and can recommend that also

 The handles are secure, stay cool, and are comfortable. I own some All Clad which are good, but their handle put in mind of walking on gravel barefoot sometimes. Yes, they're heavy but quality cookware has to be heavy. Demeyere products work well on both my induction and gas cooktops

 That's significantly more aluminum that you'll find in any other clad pan, enough to perform almost like copper cookware, while having much better heat retention. If you don't know how to cook with stainless steel to minimize sticking, search YouTube for videos, there are many. I am even weaning myself off non-stick pans by learning how to cook correctly with SS. The proprietary Silvinox surface treatment makes his cookware much easier to clean than cheaper SS pans

 They have replaced my cast iron and carbon steel pans. These pans have enough thermal mass, almost 4mm of aluminum, to sear as well as the other materials while heating up much more quickly and evenly. The last and only skillets you'll need

  Be sure to measure your cooking ring diameter. The packaging states the minimum cooking ring diameter is 8.7" for this pan (7.1" for the 11" sized equivalent pan)

First, the pan is high quality and feels really solid. In our first cooking test, it took a bit longer to heat up, but the heat distribution was very good and the pan held the heat (a bit like cast iron). It is also big and quite heavy - especially when trying to maneuver it with the long handle.  Here are some specifications that are not in the listing that can help you decide if this pan is right for you (see attached images of packaging)

 The 12.5 inch lid is Demeyere part number 6532 in case you need this accessory.  If we had known these specifications, we would have purchased the 11" sized equivalent pan (model 25628), but are keeping the 12.5" for when the kids all come home for a big meal
