Fujifilm X-A7

They're more than sharp enough and as long as you have your subject in focus they can look incredible. I'm also not a bokeh-whore so the difference in background separation between APSC and full-frame is inconsequential to me. For my portrait shooting, the Fujis provide more than enough subject separation for the images to be pleasing.

The Fujfiilm X-A7 packs a lot of camera power into a small form factor. We've little bad to say about its image quality—it may not have the latest and greatest sensor, but it holds up, and offers loads of good-looking JPG options, plus Raw capture for more serious photographers.

I really love the A7 shots I've been seeing, the light and dynamic range remind me of great film cameras, but I don't know if it's capable of delivering the colours I'm looking for without editing (vivid and warm-ish but not unnatural - Fuji's Velvia basically). - Something compact that's not going to be tiring or difficult to lug around everywhere. Ideally something that could fit in a jacket pocket with a pancake lens. - Decent viewfinder, easily-usable for glasses-wearers.

The X-A7 is similar except without a viewfinder (also discontinued). New Fujifilm cameras aren't currently available for $500-700. Unfortunately, it's a competitive market being abandoned in this age of chip shortages and supply-chain issues in favor of higher-margin products. You could also look for a used X-T20 or X-E3, for example.
