 BUT is the pan worth the $170 extra for the shiny copper backing that has to be polished after every time you use it? Honestly, no.

 Too careful. I'm not that attentive a cook. Stainless steel can take the heat but is a poor conductor. Thing is, I'm not seeing better performance with the steel lined copper compared to All-Clad d5 Stainless-Steel, which is half the price

 This makes the pan great for delicate foods like fish. I'm not sure I would like it as much on any of the electric cooktops because they have too much residual heat when you turn down the hob.  This is not a cast-iron pan; it is not an anodized aluminum non-stick pan; it is not a carbon steel pan. Each of those materials works fabulously for their niche, and this copper pan works fabulously for its niche

 So it will cook like a stainless steel pan!!! If you don't know what you're doing everything is going to stick like crazy. If you'll go to YouTube and watch some videos about cooking on stainless steel pans you'll have no trouble. This pan will behave exactly like that. Trust me, the folks on YouTube don't have magic stainless steel, and Mauviel doesn't use junk stainless steel

Worth it, but learn how to use it

 Pans with 2.5mm thickness produce the best results. The 2.5mm pan weighs heavier but the results outweigh the extra weight

Mauviel copper cookware is a excellent investment, whether from a sugar pan to a daubiere/ braising pan the results are amazing.

 This fry pan cooks much more evenly than my Calphalon and All-clad. It's not like I didn't like by other pans and yet the way Mauvel distributes its heat is amazing. Better heating at a lower temp setting. Cast iron handles work very well at not retaining heat

Amazing frypan

The stainless interior enabled a stressless cooking experience over the more fragile tin and although tin is considered less sticky, I did not notice a difference. The only difference was a very slight increase in heat over what I use for the 3mm pans. 

Having two well loved pieces of commercial 3mm copper cookware made me nervous purchasing this pan. I immediately tested it using a range of foods including eggs, crepes, fish and jelly with spectacular results.

 Nothing sticks to it and it heats evenly. I will say that it developed a patina rather quickly (by the first use is was pretty dark brown), despite not using a flame higher than medium. That said, it's nothing a little lemon and salt or Copperbrill can't fix.

Very Even Cooking

I've used this pan 3 times and it's absolute garbage. A 20 dollar pan works much better. If I can't get a refund I'm posting a review to youtube - that's how unhappy I am about this purchase.

I just received the 10 in pan today and I’m in love already! The real deal. Can’t wait to take it for a spin. I own many 2.5mm copper pots and I expect this will perform flawlessly
