I am using Asus C436, build quality is good, and it's really light weight (even lighter than Macbook Air!)
I'm using Asus C436, w/i7 + 16GB ram + 512GB SSD, I think the soon coming model Asus C536 would have similar config.

I just bought Asus Chromebook Flip C436FA last month, it's i7 quad core (not the low power one in Pixelbook), 16G ram, 522G SSD, come with USI pen as well.
I am using Asus C436, it's a 2-in-1 but in terms of weight it's lighter than Macbook Air even it's a 14" screen, the model I bought also come with USI pen, however it might be a bit pricey for you.
Pixelbook Go is not that fast enough, I suggest you get something like Acer 713, Lenovo Flex 5, Asus C436 to get more horse power.
I got 3 Asus c436’s for me, my wife and my son. My son is in school and was an upgrade for him. My wife was replacing an iPad Pro and old laptop and she now uses the CB for everything. I too ditched an iPad and now use the CB for everything.
Pixelbook Go I don't think it's better than your 713.
I am using Asus C436 which having 200-300 tabs opening all the time, it's still pretty fast.
