However, the resolution cap on the 120 footage and lack of 240fps are a bit stifling--I frequently shoot pours/drops/sprays/splashes/etc. that could really use the extra frames. The Ursa 12K is impressive for res and frame rates, but it's too much camera and I simply can't justify the price.

I have an URSA 12k and it easily does the worst in low light out of any camera I've owned at that price point. It is not a flexible camera with regards to shooting conditions. It's also an absolute monster in terms of file sizes compared to other much more simple mirrorless cameras. Blackmagic has a footage calculator on their website you can use to estimate file sizes based on crop, bitrate settings frame rates and resolutions.
