The best convertible laptop

I'm wanting to buy a very nice laptop for my grandma.

Does anyone have any suggestions?

Thinking about it, I know it will need to have a nice biggish screen,

I know she wants Windows 

light, or at least not heavy?

battery life doesn't matter she will just move it around the house

I was thinking about the dell XPS 17? anyone have any recommendations?

Performance doesn't really matter as she's going to look at pictures of grandkids and Netflix.
budget is  ~ $2000

Also, does anyone have recommendations for transferring files from the old to the new? Is there a tool that can make it easier or do you just copy paste with a USB drive?

I'd like to get a convertible (for the obvious reason of the mix of tablet and laptop) but mostly want to use a Linux distro (Mint).

Now I read a lot that on some devices the touchscreen isn't working that well, or Ubuntu might be better, so I wanted to ask you guys, what your experiences are which Convertible works best on Linux and which one you would recommend.

How would you prioritize form factor (ultrabook, 2-in-1, etc.), build quality, performance, and battery life?
Must be a 2-in-1 with Pen Support, good build quality is preferable and would like for it to last for a couple of years (Hardware and Build wise).
How important is weight and thinness to you?
I would prefer a lighter, thinner laptop since I will be carrying it around.
Do you have a preferred screen size? If indifferent, put N/A.
Would prefer a larger screen size between 13.5-15 inches. Been working with an 11 in, not fun.
Are you doing any CAD/video editing/photo editing/gaming? List which programs/games you desire to run.
Will do some programming using Visual Studio for school, basic video editing with DaVinci Resolve (No color correcting or anything intense) exporting at 1080p. 
If you're gaming, do you have certain games you want to play? At what settings and FPS do you want?
Occasional gaming, mostly League, Valorant, Minecraft and some Rocket League. Perfectly okay if at Low-Medium, just to play with friends.

I'm wondering if it's possible to find a laptop for gaming as well as art. I current have an HP Envy that's about 3 years old and she's starting to sound tired. I love being able to use it as a tablet for drawing but I also want to be able to run games better (minecraft is about all it can do well hahaha). 
Is there a laptop that can handle things like modded minecraft, skyrim, and eso that can also be used like a tablet? 
If nothing like that exists, that's totally fine. My budget is about 1500. Thanks!
