 It's super simple. Now I'm going to loosen up these teeth and this is where our knife is going to rest and then we tighten up our jaws securing that knife. And now we're gonna throw in our whetstone. I'm using a 600 grit so you start out with a lower number whetstone and work your way up

 So this sharpening system is comparable to traditional methods using a whetstone. I'm still gonna be using whetstones but the only difference is that my angles are gonna be locked in. Unless you're a seasoned pro at knife sharpening, you're gonna run into a couple of issues. First, you're not gonna know which angle your knife was previously sharpened

 And now we're gonna throw in our whetstone. I'm using a 600 grit so you start out with a lower number whetstone and work your way up. All right, so I've already taken the time to test the angle of these knives from this maker and it's around 17 degrees. Now since this system already has a pre-determined angle of 15 degrees, this is slightly ramped up

 And then as your whetstone runs across the blade, it will scrape off that marker and you can tell if you need to increase or decrease your edge to make sure that all of that marker is removed. I'm going to start out at the point edge and I'm going to run across the blade 15 times. Now once you've made your 15 passes, all you've got to do is reach underneath here, pull out, and rotate your blade. So we're going to do the same thing on the other side 15 passes

8 degrees. Now one of the things that a lot of people complain about about this sharpener is that when you flip the knife over the angle would change or it wouldn't be exactly the same. So let's have a look at R1. And it is out by probably about 0

 So if I sharpen these 5 knives I already pretty much saved myself the 40 euros. It does take time that's true and it is a bit of a faff to actually set out at right angle but once it's set the first time it's very easy for you to reset it for future sharpening sessions. So yeah once you've locked in this at whatever angle you want to sharpen at that's it you don't ever need to move this again. So then the whole thing just drops into place and you can start sharpening without using the protractor unless you want to check of course which is probably recommended

There's a method called the sharpie or the black marker method and what you do is you basically draw your black marker along here and you just give it a few grinds and wait to see if you can actually remove the black marker. If you can remove the black marker then you know it's at the right angle so you just adjust this. But I'm not going to do that because I want this knife to be sharpened at 17

5 degrees just because I want to. So we know that this knife is very very blunt. So let's start sharpening. Let's use the 240 first and then work our way through the grits

 So you have to readjust the angle every time you turn it over. Or change stones. If you're ok with that, it will sharpen very well.

Doesn't work as advertised.

This sharpener isn't marked, and includes no tool to set the bevel angle when you sharpen knives. They expect you to have your own level or angle finder, which is frankly lame. I haven't used it yet because I'm now having to find something to help me set up the angle before I can sharpen anything. It seems to have OK build quality

Good system, but stones are incorrectly rated.  Also some mechanical problems.

The directions don’t tell you to correct for the angle of the knife when it’s in the holder, so that needs to be addressed. Secondly, one of the stones has already broken after two uses. The whole setup was only $35, so I wasn’t expecting much. If anything it’s a good tool to get used to this Kindof sharpener before spending more money on a higher quality version

Great sharpener, but there is a lot of technique to it …

 For 30 bucks it ain't bad but I'd suggest getting a 2 in 1 whetstone or some diamond stones and learning to sharpen that way.
