Though it performs well as a slicer, it is surprisingly uncomfortable to hold. This is not the German made, quality knife that you think of when you see the Henckels name on the package. For the price, I ordered two. The fit and security of the handle is fine but the blade lacks the thickness of other santokus I’ve demo’d. At 7” the thickness difference makes a light knife, so it’s uncomfortable in its primary purpose

Both examples were less than my expectations

The Chevy of Zwilling’s lineup

I returned this knife along with the other Synergy knives I bought and exchanged them for the Premio series. For only a few dollars more per knife you get a much better product, and it's still part of the JA Henckels International series of knives so the high-end quality is still there.

The relatively low cost of this knife compared to the top-of-the-line Henckels knives makes it a good value for budget-minded home cooks, but the grantons are only on one side of the blade (conveniently the side that you see when looking at it in the package), making it practically useless as a santoku knife.

It's ok but not great

Good balance and sharp; safety issues on top of knife extremely sharp must be filed down to use or you will get cut. I chop daily it stayed sharp three days. I purchased a brick 400/1000 grit online works great must follow instructions to maintain sharpness. Don’t understand how they could sell such dangerous product but my husband fixed the top of knife

Inexpensive Starter Knife

Even though it's made by Henckel…it's it a $65.00 knife. It's weight is light , but sharp…it cuts very good

 My wife purchased a HENCKEL Santoku for me 16 or so years ago for Christmas. It was my favorite knife was used daily. I finally sharpened it enough to start getting into the hollow grind. If you look at the pic

 The original had a smaller handle and did not have the stainless bolster. The edge of this one had a wicked burrs when it arrived. A little time on a steel and buff with my strop sharpened it up. Other's saying it doesn't hold an edge is ridiculous

Purchased to replace one that I had worn out.

 I found that quite weird considering Santoku knives are supposed to have a lower angle and like other Japanese knives it's supposed to be sharper. Oh well.  I wouldn't out much weight on it though, since sharpness is a fleetinf feature. Like all knives get dull eventually

Arrived relatively dull. Of course it's not dull as in a 30 year old knife, but considering the reputation, I thought it would've arrived sharper than it did. Dullness might not be caused by poor quality thougjh, it seemed intentional. I also bought a Statement chef's knife and that one came in pretty sharp, so I'm guessing they sharpened the Santoku knife deliberately

The blade has no flex on it, unlike Wusthof that I already own. The handle is heavy heavy +. This might be good for some people, but I was trying to give this to my soon-to-be mother-in-law. She will reject it as it's too heavy for her
