 Alright, now what I love about this knife is the handle. It's actually made out of one piece of carbon steel and the tang reaches all the way back. That's what gives me the control. So I can go fast

 Phenomenal on the little bagels and cream cheese, they add just a punch of acid to any dish you're making. All you need is an onion and then one part of vinegar, sugar, water and a tablespoon of coriander seeds which I have boiling away in the pot. Now to cut the onion. I'm going to use my wust off seven inch hollow santoku knife and what's great about this knife is the precision it gives

 So look at these same size, great consistency. precision is what really sets this knife apart. So I'm going to gather these all up I'm going to toss them into my mixture here and these just need a flash in the pan. About ten seconds and these are going to take on this really cool pink color neon pink and that's why I call my 80s pickled red onions

 All right. let's check these guys out. Oh yeah, beautiful and look at a color bright pink and these are only going to sit and get better in the bowl. The longer they sit the more 80s they become fantastic guys

Wüsthof® Classic Hollow-Edge Santokus

  Blade: This is what you buy a knife for (hopefully), and this is where it's mediocre at best. The X50CRMoV15 steel used in this blade is extremely stain- and corrosion-resistant, and can happily survive being put through the dishwasher (which everyone else in my household does without a care in the world, other than their dread having to listen to yet another tedious lecture from me, the killjoy knife nerd who has to resharpen it). It's also pretty tough and won't chip easily in the event that you abuse the knife by, say, using a thin santoku knife for chopping bone or even for the odd utility job in the kitchen (again, typically, when the self-appointed household Knife Monitor isn't looking).  But there the positives end

Was looking for something in my past orders and noticed that I've had this knife for 10 years. So--hey--why not do a review? It's still in regular use in our kitchen, so that's certainly some sort of endorsement. That said, if I knew then what I know now about knives, I'd have bought something else.   The 5" Santoku blade is a nice compromise size. It fits in a drawer easily and is great for for light prep of vegtables but is not long enough if you are going to long-cut carrots, potatoes or eggplant.. anything over 4 1/2 inches long or so

  I had some initial correspondence with the company, mainly just getting the run around from them, as they strove to find creative ways to blame us for the problem. The knife has never been in the dishwasher, had never had harsh chemicals used on it. We use the purple or blue 3M scrubbers because we have other nice pans, flatware and cutlery. Great knife, but red Wusthof logo washed off after 2nd week of ownership.

 Fileting fish, cutting carrots and potatoes, julienne basil and swiss chard. This knife can take anything you throw at it. At a 10 degree angle it doesn't cut through harder produce as well as my French knife but it does the job. But for chopping, juliennes, slicing this is the knife

I like this knife in principle, but a poor fit with my style of use prevents a 5-star rating. The best advice I can give is to ignore these reviews and go try one at a store. A knife that is uncomfortable to use can be worse than useless. I hold my knives with the blade gripped between my thumb and forefinger, with a fair amount of pressure against the bolster

While this knife is great one should definitely go in store and hold it in your hand to get an idea of the feel There was a great sale so I just bought it sight unseen and slightly regret doing so--I'm a 5'3 petite woman and this knife is actually a bit too small for me I found out in the store that a 6 inch was better suited to fit my hands So while it's a fantastic knife it does cramp up my hands a bit when I use it and you're definitely limited on the size of the object that you can easily cut through ie save it for small chopping tasks vs cutting a pineapple! I also dislike the heel of the knife and prefer the other wusthof models that have a more curved shape--its just nicer on your hands

Good Knife, Curious Feature

Excellent knife but mine arrived looking like someone had used it. Also I didn't realize the Wustoff emblem is just a sticker that comes off, I thought it was stamped into the handle. That doesn't really matter to me, but I know it does to some people so I thought I'd mention it. I was going to get a replacement sent, but in the end I went with the Henckel pro santoku - I just liked the way it felt in my hand a little better and it matched the henckel pro set I had gotten for my counter

 I think I have finally convinced Hubby Dearest that investing in a quality knife the first time is actually more cost effective in the long run- especially since I am still happily using a couple of the Wusthof and Henckles Zwillingswerk knives my mother purchased in Germany when my dad was stationed there in the late '60s. .. I let him have the pizza dough roller he used in his teens, so I could get the chef's knife! heh, heh, heh!) Back to this knife- It is proving to be wonderful! I have only come across a couple of huge sweet potatoes that the blade was not long enough to get through lenghwise in one pass. The blade is extremely sharp! I've nicked my left thumbnail a time or two, but have thankfully avoided any slicing of fingertips thus far- (yes, I know, I should concentrate on my knife skills a bit more! Nothing like having the cat dash out of the kitchen whenever he hears me pull a blade out of the block to convince me of that
