 Actually, it has an embossed shewn logo on either side it's a VG 10 steel with a full tang going all the way back. So it's much safer to use and very, very cool about the santoku. Is it has these scallops almost like a granting edge going all the way through which helps things not stick to the blade as you're cutting, as always like? I said, vg-10 steel sharpened to a 16 during cutting angle, which makes it crazy sharp. But it's also clad in stainless steel, which gives you number one, this beautiful design

Is this just not a good quality knife? How much would it cost to get a knife that smoothly and almost effortlessly cuts through vegetables? Any recommendations (I'm looking for a decent chef knife for general food prep at home)?

I'm new to learning about knives. I recently bought [Shun Sora 7-Inch Hollow-Ground Santoku]([URL REMOVED] off amazon. It's got a rockwell hardness rating of around 61.

Question about Shun Knife for a beginner

 My knife came in dull and with the edge off to the side. When I went to sharpen it took a bit to get a good edge that lasted about a day of moderate use at work. It struggles with tomatoes which is one of the main items I bought it for. I’ve only owned the knife about 3 days but so far I’m very unimpressed with the edge retention and the factory edge

The thing is that Shun knife is pretty overpriced in the US market. Since the Sora version is exclusively for US market, you cannot get a cheaper one same as this knife (There are composite blade knives similar to this from this company at a much lower price. With wooden handles, of course. )

Nice knife but still overpriced

 This knife will cleanly slice through bread, vegetables and meats like no other knife that I have ever used. The ergo's on the handle are extremely nice and it fits in hand really well. All in all this is very impressive knife. My only complaint (and why I gave it 4 stars and not 5) is with the flexibility of the blade

 Granted it is a kitchen knife and not made for hard use but I feel that a kitchen knife has to be able to flex from side to side without fearing it will break.

 It sounds like the blade will snap in half if you flex it more than a few degrees to either side. This knife was not cheap but not too expensive however, I am not willing to test the lateral strength of the blade to see if it will hold up to hard use. Granted it is a kitchen knife and not made for hard use but I feel that a kitchen knife has to be able to flex from side to side without fearing it will break.

This knife is very elegant and I love using it

 I used it everyday, every time I cooked.Then suddenly in Feb this year (2017), the blade just broke out of its plastic handle! It could have been a major accident but I got lucky and got away with just a small cut. I have now contacted Shun and they have asked me to send it in to evaluate if it can be fixed under warranty or replaced or repaired at some cost. I will be closely monitoring their warranty/customer service and then decide if Shun knives are worth the price

  One knife requires more brute force and pressure in order to "rip" apart the food while the other knife simply does what it's been advertised: to cut.  I'll leave the audience to decipher which knife did what.

 The world may never know.)  It cut through the thyme, the garlic, and the steak (ribeye) with such ease that I almost could not believe it.  I got a friend to do a side-by-side comparison of the Shun Santoku knife with a generic Walmart brand knife that I had in the cupboard. The results speak for themselves

For those new to having nice knifes, make sure you DON'T put these in the dishwasher. The solvents in dish washing fluid will rust these faster than salt water even for 1 wash. Always hand wash your knifes by hand!
